Cheddar Biscuits with Greek Dressing


Tonight we're having pork-roast with mashed redskin potatoes, gravy and broiled asparagus. I felt like there was a need for some biscuits.

Usually, recipes that I create come from lack of ingredients in the pantry. This biscuit recipe would be one of those times. I didn't have buttermilk, but I had sour cream. I don't have a good mix of herbs right now, but I have Greek dressing...so, I improvised. The mix of the sour cream and the vinegar in the Greek give the biscuits a tangy herb flavor that's really good. 

Cheddar Biscuits withe Greek Dressing

2 cups flour
2 tsp. baking powder
1 tsp baking soda
1 tsp sugar
1 tsp salt
1 tsp minced garlic
1 cup shredded shard Cheddar cheese
1/2 cup sour cream
1/3 cup Greek (or Italian) Dressing
1/2 cup melted butter

To be brushed on top:
2 tbsp melted butter
2 tbsp Greek dressing
garlic salt

Preheat oven to 475 degrees.

Combine all dry ingredients and mix with a wire whisk. Add garlic and cheese and stir until well incorporated. in a separate bowl whisk the dressing and sour cream until smooth. Add to dry ingredients, and add the butter. Mix well. Scoop onto greased cookie sheet. Bake 12 minutes.

While baking, melt the butter. Whisk the Greek dressing into the butter. When the biscuits are done, brush with the mixture and sprinkle with garlic salt. Done! Delicious!
