Bacon, Blue Cheese, Balsamic and Basil Chicken Flatbread (With Cheats!)

We usually have pizza on Friday nights. Sometimes it's homemade, sometimes it from this little market up the street that makes great gourmet pizzas, and sometimes it's a Hot n' Ready cardboard type. We're flexible like that. This past Friday we changed things up and had flat-bread, which falls under the "pizza" category in my book.

This flat-bread can be as complicated or as easy as you want to make it. You can make your own flat bread, you can roast your own chicken, but I choose to use a store bought ready flat bread and a rotisserie chicken from the grocery deli. It made my weekend easier.

The Recipe:

Homemade or Store bought flat-bread
Olive oil
Italian seasoning blend
garlic salt
mozzarella cheese
basil
shredded roasted chicken
blue cheese
crispy pan fried bacon bits
fresh basil leaves
balsamic vinegar

Brush the prepared flat-bread with olive oil. Sprinkle with Italian seasoning, and garlic salt. Layer on Mozzarella cheese, basil, roasted chicken, blue cheese and bacon. Then drizzle on the balsamic vinegar. (Here's another cheat) I cook meals like this in our toaster oven. It cuts the time, there's no preheating required, and it saves energy by not having to fire up the big oven. Cook 8-10 minutes on 400, or until the cheese is melted and slightly browned.
